How To Make The Best Mango Salsa

This mango salsa recipe is super simple, delicious and healthy – it’s a perfect recipe to use as part of a weight loss program, or as part of maintaining a healthy lifestyle. It’s wonderful served with grilled chicken, pork or fish.

Ingredients (Serves 2)

  • 1 Mango, ripe (finely diced) – see this video to learn how to finely dice a mango
  • 1 Medium red chilli (finely diced)
  • 1 Medium red onion (finely diced)
  • 1 handful of coriander (cilantro) leaves and stalks (roughy chopped)
  • 1 Lime (juiced)
  • Salt to taste
  • Slug of of light olive oil, just enough to make the salsa glisten

Method

Mix all the ingredients in a bowl, and set a side for a few minutes before serving to allow the flavors to mingle. Then, it’s ready to serve.

Quick Salad Nicoise Recipe

This healthy, quick-to-prepare recipe is not an authentic Salad Nicoise (although you could argue it’s as authentic as most of the recipes you will find for this dish).  Rather, it’s designed to take minimum effort and minimum time to make, and still be really tasty while at the same time being part of a living a healthy lifestyle. It’s a great option if you get in from work late and don’t have the enthusiasm for a lot of cooking. You can have dinner on the table in around ten minutes with this recipe.

The quantities in this recipe serve one person for a main course – lunch or dinner; scale it up to however many you need.

Ingredients (Serves 1)

For the salad:

  • Half a small can of tune (in brine, ideally, and well drained)
  • 4 small plum tomatoes (each sliced into three pieces)
  • 2 spring onions (coarsely chopped)
  • 5 or 6 leave of crispy green lettuce e.g. Cos, Gem (torn into bite-sized pieces)
  • 1 medium-sized egg
  • Pitted olives
  • Small pinch of salt

For the vinaigrette:

  • 3 teaspoons of extra-virgin olive oil (the best you have)
  • Two thirds of a teaspoon of sherry vinegar
  • Half a teaspoon of Dijon mustard
  • Good pinch of salt
  • Freshly ground black pepper

Method

The egg in this salad needs to be hard boiled. Do it this way, to get it just perfect.  Put the egg into a small pan, and cover with cold water (the water level should be about 1cm above the top of the egg). Put on a high heat, and bring the water to simmering point. Then, put a timer on and continue to simmer the egg for exactly 6 minutes.  After that point, put the egg straight into cold water, and leave under cold running water for a minute.

While the egg is boiling, you can prepare the other ingredients, and make the dressing.  To make the dressing, put the oil, vinegar, salt, pepper and mustard into a very small dish, and mix vigourously to form a thick emulsion.

When the egg is ready, and cooled down, peel the shell off under running cold water. Dry the egg, and cut into quarters.

Now you are ready to assemble the salad. Put all the salad ingredients (except the egg and the salt) into a serving dish.  Add the dressing, and toss the salad so the dressing coats all the ingredients.  Then, place the four quarter of egg on top of the salad, with the yolk facing up. Sprinkle a tiny amount of salt onto each piece of egg. Serve.

How To Make Perfect Guacamole

Almost everyone loves guacamole, and if you make it from scratch it’s really healthy. That’s because avocado is one of the healthiest foods you can eat. Of course, it’s high in calories, so watch the portion sizes! This recipe is for an authentic Mexican guacamole. It’s really simple to make – anyone can do this one. What makes this the best guacamole is the balance of the ingredients. It’s truly delicious; and much better than any ready-made guacamole you can buy from a store. Make this at the last minute, and serve right away.

Ingredients (Serves 3 – 4 people)

  • 2 ripe avocados (roughly mashed, ideally in a pestle and mortar, but that’s not critical)
  • 1 plum tomato (de-seeded and finely chopped)
  • 1/4 medium sized red onion (finely chopped)  (alternatively, use 2 small shallots)
  • 1 medium sized red chili pepper (de-seeded and finely chopped)
  • 1 handful of fresh coriander leaves (cilantro for readers in the US) (finely chopped)
  • 1 lime, juiced
  • Sea salt and freshly ground pepper to taste

Method

Put all the ingredients, except the avocado and the salt and pepper, into a medium sized mixing bowl. Then, half the avocados, scoop out the flesh and mash – ideally in a pestle and mortar. Don’t over-mash the avocado, you don’t want the texture to by too smooth. Add the avocado to the rest of the ingredients, and mix. Taste the guacamole, adjust the seasoning by adding salt and pepper until you’re happy. Serve in a small bowl.

This guacamole is best served immediately you’ve finished making it. If you’re entertaining, you can put everything in the mixing bowl, except the avocado, ahead of your guests arriving. Then it’s a matter of three or four minutes to peel and and mash the avocados and finishing the guacamole when you’re ready to serve it. A portion of this is perfect with a couple of handfuls of corn tortilla chips; or with some crispy fresh vegetables.
